You have to cast the result in HQL so that Hibernate understand the Java type it should use for extracting the value. Something like select cast(function('json_extract', ..) as java.lang.String) ...

This could be a bug in the criteria query translation. Could you put a breakpoint to HQLQueryPlan.java:113 and let me know what the generated HQL query is?
